“NEITEA” IGT Toscana Rosso produced by Organic Farming the scenic
hills of the City of San Gimignano from Sangiovese grapes. Deep ruby
red in color, the taste is full and persistent flavor. Among the
ideal
combinations are indicated Grilled red grilled meat and game.

Production Area | Hills of the borough of San Gimignano – height 300 metres above sea level. |
Wine Grapes | 100% Sangiovese. |
Soil | Pliocene origin, medium texture, widespread clayey soil, framework present. |
Cultivation | Spur-pruning of 6-8 buds, density of 5,000 vines per hectare. Yield no superior to 70 (quintal) grapes per hectare. Green pruning. Hand selection and collection of grapes into small crates. |
Vinification | Alcoholic fermentation in steel tanks with repeated punching down with lid, soaking lasts for about 15-20 days at a controlled temperature of 26-28°c. following the drawing-off into oak drums of varying capacity into which the malolactic fermentation takes place |
Ageing and Refining | At the end of the fermentation period it remains to be refined in oak drums for 12/14 months. The wine is assembled together, laid to rest in steel tanks for a month before bottling. Refining in bottles for about 6 months. |
