Vernaccia di San Gimignano DOCG produced from organic farming the
scenic hills of the City of San Gimignano only grapes Vernaccia di
San
Gimignano. Straw yellow in color, the palate presents a balanced
and
harmonious taste with a final pleasantly sour. Among the ideal
combinations they are indicated hors d’oeuvres, fish, shellfish,
white
meats and fresh cheeses.

Soil | Pliocene origin, medium texture, widespread clayey soil. |
Cultivation | Spur-pruned with 8-10 buds – density of 5,000 vines per hectare. |
Vinification | Soft pressing of the grapes, fermentation at a controlled temperature of 18-20°c in steel tanks for about a month with the help of selected raising agents. |
Ageing and Refining | At the end of the alcoholic fermentation period the wine is matured in contact with its fine dregs in a steel tank for about 4 months, after this it is bottled and refined for a month before marketing. |
