Chianti Colli Senesi DOCG produced by Organic Farming the scenic
hills
of the City of San Gimignano from the Sangiovese grape. Deep ruby
red
in color, the palate has soft tannins and a wrap flavor, with a
lingering aftertaste. Among the ideal combinations are indicated
grilled red meats grilled, boiled, soups, meats and cheeses.

Soil | Pliocene origin, medium texture, widespread clayey soil, framework present |
Cultivation | Gguyot and spur-pruned vines with 6-8 buds. Density 5,000 vines per hectare, yield no superior to 75 (quintal) grapes per hectare, green pruning. |
Vinification | The grapes are vinificated at a controlled temperature between 25/28°c in stainless steel tanks. Soaking for 12/15 days by means of punching down (follature) lid. |
Ageing and Refining | The wine is transferred into oak barrels of various capacity for a period of 4 months |
