“OSTREA” Vernaccia di San Gimignano DOCG Selection produced from organic farming in the hills of San Gimignano, with a pale yellow color and by the consistent and elegant flavor, with complex aroma with hints of fruit.

“OSTREA” Vernaccia di San Gimignano DOCG produced from organic farming the scenic hills of the City of San Gimignano only with a selection of grapes Vernaccia di San Gimignano. Straw-yellow color, the palate presents a consistent and elegant flavor, with complex aroma with hints of fruit. Among the ideal combinations they are indicated appetizers, pasta dishes and soups, fish, white meat tasty and carpaccio.

Wine Grapes Selection of Vernaccia di San Gimignano grapes
Soil Pliocene origin, partly medium texture, widespread clayey soil, partly loose soil with large framework content
Cultivation Guyot with some varieties, spur-pruned vines, dry pruning of 6-8 buds, density 5,000 vines per hectare. Yield no superior to 60 (quintal) grapes per hectare. 

Management of green, thinning, hand selected grapes, harvest of overripe grapes into small crates.
Vinification Cryo-maceration (low temperature skin contact) of the grapes, soft pressing of the grapes, decantation of the most.

Fermentation in small French oak barrels of 225 litres at a controlled temperature of 18/20°c. the most from the fermentation is kept moving to give the wine the best structure and softness.

Ageing and Refining At the end of the alcoholic fermentation period the wine is kept in the drums in contact with the fine dregs for 4/5months.

Following bottling and refinement of about 3 months.
