Cultivation | Cordon spur with 6 buds – density of 5.000 vines per hectare, yield not exceeding 50 quintals per hectare. Green pruning. |
Vinification | Grape picking is done manually in order to preserve the integrity. Before alcoholic fermentation, the grapes are cold macerated for 48 hours at about 6 ° C in order to extract the characteristic aromas of Syrah. The subsequent alcoholic fermentation takes place at a controlled temperature between 25/28 ° C in stainless steel tanks. Maceration for 15 days by cap punching down. |
Ageing and Refining | The wine is transferred to 225-liter oak barrels for a period of 24 months. Refinement in the bottle lasts for 12 months in a thermo-controlled cellar at 16 ° C. |
