IGT Toscana Rosso Syrah produced by Organic Farming the scenic hills
of the City of San Gimignano from Syrah grapes. Deep ruby red in
color, the palate has a soft taste and fine texture. Among the ideal
combinations are indicated Grilled red meat grilled, boiled, soups,
meats and aged cheeses, interesting with chocolate.

Spur-pruned with 6-8 buds – density of 5,000 vines per hectare, yield not superior to 50 (quintal) grapes per hectare. Green pruning.
before the alcoholic fermentation process, cold soaking of grapes for 48 hours at about 6°c, finally extracting the characteristic syrah aromas. The next alcoholic fermentation process is carried out at a controlled temperature of between 25/28°c in stainless steel tanks. Soaking for 5/6 days by means of punching down (follature) lid.Manual, in small crates of 15/20 Kg capacity, in order to preserve the integrity of the cluster until the transfer in the cellar. Limited cold maceration of grapes at about 6°C for 2 days before pressing to extract all aromas.
Ageing and Refining
The wine is transferred into oak barrels of various capacity for a period of 6 months. Refining into bottles for a period of 6 months in a thermo-controlled cellar – at a controlled temperature of 16°c.
Intense ruby red
Various varieties of plums and berries, with a final characteristic aroma of pepper and vanilla due to time spent in wood.
Soft and well structured, characteristic between versatile and elegant, with a tannin soave component well linked to the body of the wine; fresh and dynamic. It unfolds with authority, showing its unquestionable refinement.
